It is this love for the traditional home Greek cooking using the best freshest ingredients to create healthy, tasty food to nourish your friends, family and your selves that inspired us to to teach and assemble the best traditional Greek recipes in a beautiful cookbook "Papas Mastering the Art of Traditional Greek Cooking."

Kali Oreksi! George J. and Chrisoula Papas.

George was born in Limnes, a small rugged village in the Peloponisos. HIs father operated the only butcher shop and tavern in the village at that time. The food for the customers were prepared in the fireplace in the family kitchen. He hung around this area every time an order would come with the knowledge that he would get a taste of the food from his mother. He would watch her make bread and help stir the food in the frying pan or the casserole. After his father came to the United States in 1951 and his older brother couple of years later he help in the business until he joined the rest of the family in 1957. It was not too long after words that the family plunged into the food business in their new homeland. Working close to his father he learned all the secrets to produce tasty food.

"If you want to eat food the way you like it, you must learn to cook it yourself. And do not serve any food to others unless it is good enough for you to eat." said his father.

Chrisoula was born in Argos, Peloponisou, a fertile valley of vegetables and citrus fruit. Even though her family was not in the food business her father often brought company to the house where her mother would cook for them. Her cooking skills did not sharpened until she came to the United States in 1965 and married George. She was overwhelmed  by her new family's passion for food. All conversations at the table was about food, to criticize or to praise the cook and what was going to be cooked for the next meal. She quickly learned that, to win the approval of her new family, she too had to immerse herself in food.

Together George and Chrisoula bring to you three generations of professional experience in the food business and thousands of years of Greek culture and traditions. It is not just Greek to them but a way of life.
